A Heritage Breed Raised the Way Nature Intended - Only 3 Pork Shares Available

Our Kune Kune pigs are raised on pasture using regenerative farming practices that prioritize animal welfare, soil health, and exceptional meat quality.

Kune Kune pigs are a heritage breed known for producing richly flavored pork with exceptional marbling and outstanding fat quality. Unlike conventional pork that is typically harvested in 6–7 months, our Kune Kunes are grown slowly over 12–14 months on pasture. This extended growing period allows the meat and fat to develop naturally, producing pork with exceptional marbling, flavor, and texture.

The result is pork that is:

Richly marbled
Tender and juicy
Deeply flavorful
Excellent for curing, smoking, roasting, and grilling

Kune Kunes are naturally smaller-framed than commercial hogs. While the cuts may be smaller, the flavor, texture, and eating experience are second to none.

Availability is limited and offered on a first-come, first-served basis.

How Our Pigs Are Raised

Our pigs are rotationally grazed on pasture and raised using natural farming practices.

Their diet includes:

Fresh pasture and seasonal forage
Roots, grubs, and crop residues
Certified organic supplemental feed

We do not use routine antibiotics, growth promotants, synthetic herbicides, or synthetic pesticides in our production system.

The result is pork raised slowly and intentionally, with exceptional flavor and remarkable fat quality.

How Pork Shares Work

Washington State regulations require livestock ownership and meat processing to be handled as separate transactions.

When you reserve a pork share, three separate payments are involved:

1. Reservation Deposit (Paid to Olson Organics)

Reservation Deposit: $200

Your deposit reserves one pig from our Summer 2026 harvest group and is applied toward your final livestock balance.

2. Processing Fees (Paid Directly to the Processor)

Customers work directly with the processor and pay all cutting, wrapping, curing, smoking, and specialty processing fees directly to the butcher.

3. Final Livestock Balance (Paid to Olson Organics)

The remaining livestock balance is calculated using the final hanging weight and is due before pickup or delivery.

Because animals are harvested specifically for their owners, deposits become non-refundable once harvest scheduling has been finalized.

Recommended Cuts

Bacon (or belly slabs)

Our most highly recommended cut.

Because Kune Kunes are a smaller-framed heritage breed, bacon often provides the best combination of flavor, versatility, and overall value. The exceptional fat quality of this breed produces outstanding bacon.

Pork Chops

Tender, flavorful, and well-marbled.

Pork Roasts (shoulder and loin)

Perfect for smoking, braising, and slow roasting.

Ground Pork

Versatile and richly flavored for everyday cooking.

Sausage

A customer favorite for breakfast, grilling, and meal preparation.

Ribs

Smaller than conventional pork but exceptionally flavorful.

Frequently Asked Questions

How Much Freezer Space Do I Need?

A typical pork share requires approximately 4–5 cubic feet of freezer space.

For reference, most upright or chest freezers provide 10–20 cubic feet of storage.

Can I Get Bacon and Ham?

Absolutely.

We highly recommend bacon for Kune Kune pork. Due to the naturally smaller size of the breed, ham cuts are typically smaller than those from commercial hogs. Most customers choose to maximize bacon and sausage production while still reserving some ham.

Do You Offer Nitrate-Free Curing?

Curing options vary by processor. Please discuss available curing methods directly with the butcher when completing your cut sheet.

Do You Deliver?

Yes.

We offer free local delivery within our standard delivery area or pickup by appointment.

Delivery scheduling will be coordinated once processing is complete.

What If I Want a Larger or Smaller Pig?

When reserving your share, let us know your preferences. We will do our best to match your requested size based on the animals available at harvest.

Final balances are always calculated using actual hanging weight and are due prior to pickup or delivery.

Can I Split a Pig With Family or Friends?

Absolutely.

Many customers choose to split a pig with family members, neighbors, or friends.

To keep scheduling, processing, and accounting simple, Olson Organics sells whole pork shares only. Customers who choose to split a pig are responsible for coordinating payment, meat distribution, and freezer storage among themselves.

Important Notice

Pork shares are sold based on ownership interest in a live animal prior to harvest. Processing services are contracted separately between the customer and the processor. Processing fees are paid directly to the processor.
