We believe exceptional meat begins with healthy soil, healthy pasture, and healthy animals. Our lambs are rotationally grazed on pasture using regenerative farming practices that prioritize animal welfare, soil health, and exceptional meat quality.
Unlike conventional production systems that rely heavily on confinement and imported feed, our lambs harvest much of their own diet directly from pasture.
The result is lamb that is:

How Our Lambs Are Raised
Our sheep are rotationally grazed on pasture throughout the growing season.
Their diet includes:
Fresh pasture grasses
Diverse forage species
Seasonal browse
Free-choice minerals formulated to support animal health and nutrition
Our grazing system is designed to promote animal health, pasture recovery, and soil improvement.
We do not use routine antibiotics, growth hormones, grain, synthetic herbicides, or synthetic pesticides in our production system.
How Lamb Shares Work
Washington State regulations require livestock ownership and meat processing to be handled as separate transactions.
When you reserve a lamb share, three separate payments are involved:
1. Reservation Deposit (Paid to Olson Organics)
Reservation Deposit: $200
Your deposit reserves one lamb from our Summer 2026 harvest group and is applied toward your final livestock balance.
2. Processing Fees (Paid Directly to the Processor)
Customers work directly with the processor and pay all cutting, wrapping, and specialty processing fees directly to the butcher.
3. Final Livestock Balance (Paid to Olson Organics)
The remaining livestock balance is calculated using the final hanging weight and is due before pickup or delivery.
Because animals are harvested specifically for their owners, deposits become non-refundable once harvest scheduling has been finalized.

Harvest & Processing Timeline
After all available lamb shares are reserved, we will schedule processing and provide estimated harvest dates.
After harvest:
The processor will contact you directly.
You will select your preferred cuts and processing options.
The processor completes cutting, wrapping, and freezing.
We coordinate pickup or free local delivery.
Processing typically takes two to four weeks depending on seasonal demand.

How Much Freezer Space Do I Need?
A typical lamb share requires approximately 3–4 cubic feet of freezer space.
For reference, most upright or chest freezers provide 10–20 cubic feet of storage.
Do You Deliver?
Yes.
We offer free local delivery within our standard delivery area or pickup by appointment.
Delivery scheduling will be coordinated once processing is complete.
What If I Want a Larger or Smaller Lamb?
When reserving your share, let us know your preferences.
We will do our best to match your requested size based on the animals available at harvest.
Final balances are always calculated using actual hanging weight and are due prior to pickup or delivery.
Can I Split a Lamb With Family or Friends?
Absolutely.
Many customers choose to split a lamb with family members, neighbors, or friends.
To keep scheduling, processing, and accounting simple, Olson Organics sells whole lamb shares only. Customers who choose to split a lamb are responsible for coordinating payment, meat distribution, and freezer storage among themselves.
Important Notice
Lamb shares are sold based on ownership interest in a live animal prior to harvest. Processing services are contracted separately between the customer and the processor. Processing fees are paid directly to the processor.
