Sweet, nutty, and creamy when cooked, acorn squash is one of our fall favorites. It is easy to prepare - cut it in half, scoop out the seeds, and roast until tender, or slice it into wedges and roast with olive oil, salt, and your favorite herbs. It's shape also makes a perfect little bowl for stuffing with grains, sausage, or other seasonal fillings. The skin softens as it cooks and can be eaten, too!
