Cuor di Bue means “ox heart” in Italian, which describes its distinctive large, heart-shaped fruit. Cut one open and you’ll find an unusually meaty interior with relatively small seed cavities. Cuor di Bue is wonderful for sauce and cooking, but we wouldn’t automatically send it to the sauce pot. Its tender flesh and rich flavor also make it an exceptional fresh tomato. Slice it for a sandwich or salad, or simply serve it with olive oil and a little salt.
