Farmer's Note

"I fell in love with Piimä cultured milk because it is the ultimate smooth, drinkable ferment. If you don't like cultured milks or yogurt, but you want to easily "hide" it your smoothies, dressings, and shakes, this is the one."

Meet Piimä [pee-muh]. A cornerstone of Finnish dairy culture for centuries, this heirloom mesophilic fermented milk offers a milder, much more approachable way to enjoy rich, daily probiotics — crafted right here on our farm with our Grade A raw goat milk.

What Does It Taste Like?

Unlike the sharp, acidic bite of standard yogurt or the carbonated, yeasty effervescence of kefir, piimä is celebrated for its incredibly clean, light, and delicate profile.

  • The Flavor: Mildly buttery and nutty, rounded out by a light natural sweetness. Because it is less tangy than other cultures, it allows the clean, sweet quality of our fresh raw goat milk to truly take center stage.

  • The Texture: Silky, pourable, and exceptionally thin, with a velvety consistency that resembles liquid honey. Despite being highly fluid and drinkable, it leaves a rich, creamy coating on the palate, thanks to the hydrating exopolysaccharides (EPS) synthesized naturally by our heirloom strains.

How to Use It as a Kefir Alternative

Piimä is highly versatile, serving as an exceptional drinkable yogurt or a pourable, probiotic-rich liquid in your kitchen.

  • Smoothies & Breakfast Glasses: Pour it straight into a glass to drink, or blend it into your morning smoothies. Its fluid, honey-like consistency mixes effortlessly with fresh fruit, honey, and protein powders without clumping or requiring heavy blending.

  • Light Batters & Crepes: Use it as a 1:1 replacement for buttermilk, kefir, or sweet milk in thin batters like crepes, pancakes, and quick breads. The natural lactic acid reacts beautifully with baking soda to yield an incredibly tender, light, and airy crumb.

  • Pourable Dressings & Marinades: Its sweet, mild notes make it a stellar canvas for fresh herbs in pourable ranch dressings, or as a tenderizing caprine marinade for poultry and pork where kefir or vinegar would taste too sour.

Traditional Finnish Inspiration

In Finland, piimä is appreciated as a refreshing, therapeutic daily beverage and a comforting companion to simple, rustic meals.

  • The Refreshing Glass: Finns traditionally serve a cold glass of piimä right alongside their midday or evening meals as a soothing, highly digestible digestif.

  • Porridge Topping: Pour it cold over hot summer barley or oat porridge, letting the cool, creamy milk melt into the warm grains.

  • A Simple Nordic Bowl: Enjoy it cold in a bowl topped with a handful of fresh wild berries (like bilberries or lingonberries), a drizzle of honey, and a light sprinkle of granola.
