Meet Heirloom Greek Cultured Yogurt
Unlike commercial "direct-set" yogurts made from single-use lab strains, our Greek yogurt is crafted with a self-propagating heirloom consortium of Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus. These strains work in beautiful proto-cooperation, pre-digesting milk proteins and lactose to yield a thick, spoonable yogurt with superior probiotic viability.
What Does It Taste Like?
A perfectly balanced, savory-sweet thermophilic yogurt with a clean, pleasant tartness and zero bitter aftertaste.
The Flavor: Full-bodied, creamy, and mildly sweet with a clean caprine finish. The cooperative action of the strains naturalizes the green, grassy aldehydes of goat milk, leaving a smooth flavor profile.
The Texture: Dense, spoonable, and remarkably thick. By holding our milk at temperature for 30 minutes before inoculation, we "unfold" the primary whey protein, ββ-lactoglobulin. This creates a protein mesh that forms strong, covalent disulfide bonds with κκ-casein on the casein micelles. This whey-casein complex traps water molecules, doubling the final viscosity of the gel and preventing whey separation.
