Meet Raw Whole Nubian Milk
We harvest our Grade A raw milk from our purebred Nubian does . Known for their long, pendulous ears and distinctive Roman noses, Nubians are uniquely adapted to directing their metabolic energy toward producing highly concentrated, component-dense milk rather than sheer volume. This results in milk overflowing with natural milk solids, butterfat, and proteins.
What Does It Taste Like?
Unlike high-producing alpine breeds whose milk can feel thin, our raw Nubian milk is exceptionally full-bodied, sweet, and complex. It has a clean finish with none of the harsh, polarizing "goaty" smell or taste often associated with poorly handled or over-processed goat milk.
The Flavor: Naturally sweet and rich with a clean, sweet dairy finish. Because our does graze on high-quality, aromatic pasture, they transfer beneficial compounds to the milk, adding subtle herby and sweet undertones that change from nutty and rich in the fall to delicate and clean in the spring.
The Texture: Luxuriously velvety and smooth on the palate. Our milk is naturally homogenized. Because Nubian milk fat is organized into exceptionally small globules (averaging 2.0 to 3.5 microns) and naturally lacks the clustering protein agglutinin, the cream stays beautifully suspended in the liquid phase instead of rapidly rising to the top.
How to Use It
Pure Drinking Milk: Enjoy a cold glass straight from the fridge to experience its natural sweetness and thick mouthfeel.
Specialty Coffee & Lattes: Steam it for lattes or pour it into morning coffee. The naturally small fat globules create a micro-foam that holds its shape beautifully without collapsing.
Artisanal Cheesemaking: With a baseline protein of ~3.8% and fat of ~4.8%, it provides the perfect protein-to-fat ratio (0.80 to 0.90) for high-yield, premium cheesemaking.
Postharvest & Handling Standards
Our raw milk is filtered and rapidly chilled in a specialized milk tank to 39∘F within 30 minutes of milking. This rapid cold chain management arrests the kinetics of native lipases, preventing the breakdown of fragile fat membranes and keeping the milk tasting beautifully sweet and mild.
