Considered one of the World’s Healthiest foods. I felt inspired by the amazing health benefits kimchi has to offer! I researched so many traditional Korean fermented recipes and felt like the veggie ingredients were almost identical to what we can grow right here in Ventura and Santa Barbara Counties’ Organic Farmlands. The only ingredient we could not find growing locally was what gave the kimchi all its spicy flavor-Gochugaru-made traditionally by drying Korean red chili peppers in the sun, de-seeding them and crushing them into the flakes. We found an organic Korean farm that was still growing with traditional farming practices and off we went into Kimchi land! Our Kimichi is tangy, raw, rich in probiotics, vegan, uniquely Californian, and fermented in glass for 28 days.
Suggested dose: Two tablespoons. Pairs well with eggs, kimchi fried rice, stir-frys, sushi, avocado toast, burgers, tofu dishes, sandwiches, tacos, stews, and soups.
