Our 2021 Cabernet Sauvignon is once again from a region within the Paso Robles AVA that has hot days and cold nights, allowing us to make a fruit-forward wine without compromising acidity. Temperatures remained relatively mild through harvest, allowing longer hangtime for increased flavor development.
For this vintage, we rounded out the Cabernet Sauvignon with 20% Cabernet Franc, adding just a bit of savory spice and herbaceousness to the palate.
Aged for 15 months in French oak, including some second-use barrels, this wine shows seamless oak integration and soft tannins.
