All hail the Ribeye! The fattiest and most flavorful part of the loin section. Ribeyes are cut from the rib side of the loin. Further towards the tail the muscle gets leaner and transitions into the NY/Porterhouse/T-Bone steak. These are cut around 1 inch thick. Ribeyes are truly a treat if you aren't afraid of a little fat (flavor). Average weight .75#. $34/lb
