Flank steak is the biggest diaphragm muscle. Flank is thin and very flavorful. There is only 3-4lbs per whole animal, so get it while it lasts!! These are on average 1.25lb packs. When preparing skirt or flank, cut across the fibers or grain of the meat for maximum tenderness.
