Garlic Scapes are the soft, lime green-colored stems and unopened flower buds of hardneck garlic. Use as you would garlic. When cooked the taste is more mellow and sweeter than garlic. You can add punch to your pesto, dips, or salsa or grill for a simple spring side dish.
