Our Dry Farmed Tomato Tartlets feature the renowned Dry Farmed Early Girl Tomatoes grown by Dirty Girl Produce. These intensely flavorful dry-farmed tomatoes are cradled inside our flakey buttery ruff puff pastry and filled with whole milk ricotta and gruyere cheese, basil oil, and sliced garlic.
In dry-farming, once the plants are established, irrigation is cut off, forcing the roots to grow deeper into the soil to seek water and nutrients. Though this stresses the plant, it results in an intensely sweet and flavorful tomato that uses minimal water.

Storage & Handling
This product is perishable and ships chilled.
Keep frozen until baking. Pre-heat your oven to 400°. For convection ovens, lower the given temperature to 375°. If your pastries brown too quickly, cover them with a loose sheet of foil. We include parchment sheets with each shipment and recommend that you use them to line your baking tray. For a golden brown crust, brush the dough with cream, milk, or an egg wash.
