Our Process
This isn’t your ordinary pumpkin pie! Chef Becky uses organic sugar pie pumpkins grown on the vine from our friends at Full Belly Farm to create this fall specialty. Each of these small, sweet pumpkins is roasted to perfection in our farm kitchen and then stirred into warm caramelized sugar. This delicious mixture is then poured into a pie crust that has been layered with a cozy gingersnap cookie crumble. The pie dough is made light and flaky from Chef Becky’s special mixture of organic butter and 100% pasture raised leaf lard from Prather Ranch. After baking, this Caramel Pumpkin pie is smooth, luscious, and silky - it feels almost like pumpkin flan rather than pie! This pie is truly a labor of love, which you can taste in each handcrafted bite.
