From Cuyama Orchards. Cuyama Orchards Raw Apple Cider Vinegar is made exclusively from organic specialty and heirloom apples, grown on their estate in the upper elevations of the Cuyama Valley. Cuyama makes their vinegar using the traditional "Orléans" brewing method, dating back to the Middle Ages. In this nearly lost method for producing fine culinary vinegar, small batches of fruit are juiced and fermented in oak barrels over a period of months. This slow, natural process, allows the vinegar to capture and reflect the quality and characteristics of the fruit, to produce a superior Raw Apple Cider Vinegar.
