Our pastured pigs are a cross between hearty heritage breeds (American Guinea Hog x Ossabaw). They clean up fields, eat food scraps, and consume huge amounts of extra vegetable materials as we cycle through our planting beds. They turn brushy areas into cleaned-up fields, and they also taste great. These rib sections are a little smaller than the ones from the CAFO behemoths, but the taste is infinity times better. Low-and-slow cooking is a must for these, and they work with all kinds of delicious BBQ sauces. These cuts are $8/lb and usually run between 1.5 and 2.5 pounds per package.
