Description

Thick slices of hog jowl, salted and aged to perfection. Smoked slow 'til golden brown. Each bite, a burst of savory goodness.

They come from our pastured pigs, a cross between hearty heritage breeds (American Guinea Hog x Ossabaw). They clean up fields, eat food scraps, and consume huge amounts of extra vegetable materials as we cycle through our planting beds. They turn brushy areas into cleaned-up fields, and they also taste great. In North Carolina, Ed grew up eating this every New Year's Day as part of a quartet of "good luck" foods: "hog jowls," collard greens, black-eyed peas, and stewed tomatoes. It's worked out so far for him! So eat "low on the hog" and taste the delicious flavor.

The jowl bacon packages $9/lb and usually weigh about .5 lbs per pack.
