What once was a left-over or a by-product of the backyard flock of laying hens is now a hot commodity as everyone is interested in bone broth and collagen and stretching your grocery budget. Stewing hens or roosters have a lot of value in the kitchen of someone who knows what to do with them.
Don't get me wrong, this is not a bird you would want to throw on the grill or make fried chicken with - if you do that, you will be really disappointed.
Stewing hens (or roosters) are fantastic for making nutrient-dense broth or stock and slow-cooking for shredded chicken to be used in a wide variety of meals - high protein chicken salad, savory chicken & noodles, casseroles, cold salads, enchiladas, or piping-hot chicken noodle soup.
You can also do both! Slow cook them for the meat, then toss the bones back in the pot and simmer for 12-24 hours for broth that doesn't even compare to that stuff in the carboard carton.
