Depending on where on the animal the roast comes from, it could be tender or a little leaner and tougher, so knowing what kind of roast you are getting and what's the best way to cook it is really important.

Shoulder Roast: As the name implies, this cut comes from the front shoulder of the body. It is typically a leaner cut, so shoulder roasts are best cooked slowly with lots of moisture. You don't want to let this one dry out when cooking. Cook it right and the meat will be very flavorful and pull apart easily.
