The most tender cut on the animal and one we don't have much of! Our Wagyu Cross cattle were raised to 3 years old, primarily on grass with only a minimal amount of non-GMO barley. The result is beautifully tender beef with wonderful flavor and marbling. Cut into filets or cook whole and keep the preparation simple—this is one of those cuts that doesn't need much help.
